Dark Chocolate Paleo Cupcakes

The cupcakes themselves are made from coconut flour and the icing is made from your choice of almond or cashew butter. The result is a decadent treat that will satisfy your sweet tooth.

Made from coconut flour and topped with chocolate icing, these Paleo Cupcakes are just the thing to curb your sweet tooth.

Prep Time: 15 minutes

Cook Time: 20 minutes


  • 1/2 cup coconut flour
  • 1 t baking soda
  • 5 eggs
  • 1/4 cup honey
  • 2 T coconut milk
  • 2 T coconut oil
  • 1 t vanilla extract
  • For the icing:
  • 1/2 cup cashew or almond butter
  • 1/4 cup 70 % dark chocolate
  • 2 T coconut oil

How to Make It:

1. Preheat oven to 350°F.

2. Combine coconut flour and baking soda in a bowl; set aside.

3. In a separate bowl, mix eggs, honey, oil, milk, and vanilla together; fold wet ingredients into dry.

4. Place cupcake liners into muffin tin and spray each one with a bit of nonstick spray; pour batter evenly into each liner and then place try in oven.

5. Bake for approximately 20 minutes, or until cupcakes are cooked through.

6. For the icing, melt chocolate and oil together in a saucepan over stove top and combine chocolate mixture with nut butter in a bowl; stir.

7. Optional: place icing in refrigerator. This isn’t necessary, but it helps it become a bit more icing-like (though I thought it was a fine texture without being refrigerated too).

8. Ice cupcakes and enjoy and have a good health.
