HEALTHY PIE WITH LEMON FILLING AND KIWI TOPPING

Delicious healthy pie is an easy and light dessert. It is prepared really quickly and one piece has only 80 calories.

PREPARATION TIME:

30minutes, bake 25 minutes on 160 Celsius

NUTRITION VALUE (14 pieces):

88 calories/piece (3.2g proteins, 11.5g carbs, 2.7g fats)

INGREDIENTS FOR THE DOUGH

  • 150g spelt flour
  • 1 tsp baking powder
  • 1 egg
  • 40g margarine with less fat
  • 1 tbsp of sweetener of your choice (I use Stevia + Erytrol)
  • 1 tbsp rum
  • 1 tsp vanilla essence

 

  1. First mix all dry ingredients, than add wet.
  2. With your hands kneed ingredients into a dough and let it rest in the fridge for 30 minutes.
  3. After 30 minutes press the dough (on bottom and about 1cm on the sides)  in a round baking tray (mine is size 24cm), covered with parchment paper.
  4. Put it in a fridge and prepare lemon filling.

INGREDIENTS FOR LEMON FILLING

  • 3dcl milk (1,5%)
  • 2dcl water
  • 3 egg yolks
  • 1 tbsp of sweetener of your choice (I use Stevia + Erytrol)
  • Juice of half lemon
  • 1 tbsp of rum
  • 3 tbsp cornstarch

 

  1. Mix 8 tbsp of milk with sweetener, lemon juice, rum and cornstarch (mix until you get a creamy, lump free texture).
  2. Mix the rest of the milk and water with egg yolks and bring the mixture to boil.
  3. Remove from heat and slowly add cornstarch mixer (mix all the time).
  4. Put mixture back to the heat and cook for another 5 minutes (cook slowly and mix all the time)
  5. *If you get any lumps just mix them with electric mixer
  6. Pour mixture in a prepared baking tray and bake 25 minutes on 160 Celsius.
  7. When pie is cooled prepare kiwi topping.

INGREDIENTS FOR KIWI TOPPING

  • 3g powdered agar agar
  • 8 small kiwis
  • 1 cl of water
  • 1 tbsp of sweetener of your choice (I use Stevia + Erytrol) – depends how sweet your kiwi is
  • 1 tbsp of lemon juice

 

  1. Mix all ingredients in a blender.
  2. Cook for 5 minutes on medium heat.
  3. Pour over cooled down pie and put in a fridge for a few hours.
  4. Decorate with dark chocolate and fresh kiwi.
